Perfect for a cool winter evening, this hearty soup can be made with a few pantry staples and cans, like those given out in our food parcels.
INGREDIENTS
2 tbsp oil
1 large onion, diced
1 tsp cinnamon
1 tsp cumin
1 tsp coriander powder
1 tsp crushed ginger
1 tsp crushed garlic
1 tsp crushed chilli
1 tsp stock powder
3 cups water
1 can chopped tomatoes
1 can condensed tomato soup
1 can lentils
1 can chickpeas
1 lemon, grated rind and juice
Salt & pepper
METHOD
In a large pot, saute the onion in the oil until soft.
Add all the spices and cook for 1-2 minutes.
Add the water and stock powder, then all other ingredients. Bring to the boil and simmer for 5 minutes.
Taste and season. Add a little sugar if it’s a bit sharp.
Serve with crusty bread.
