Breakfast scones at Iona

Scones for Breakfast! Residents at Iona, in our Mackay home, love Tuesday baking afternoons, preparing treats for Breakfast Club the following morning.

Recently, freshly picked apples from our garden were used to make apple spice scones. To add some extra flavour and texture, two toppings were tried — a zesty lemon drizzle and a brown sugar cinnamon crunch.

One resident commented, “This reminds me of the times I baked with my mum.”

Listening to residents’ conversations and later seeing the enjoyment as they shared and ate the scones highlights the value of being involved in these simple activities — ones that spark memories and joy. Across our Enliven care homes, we strive to offer fun, engaging experiences that encourage participation and support wellbeing, and baking is clearly a well‑established favourite.

Scone Recipe  

  • 3 cups self raising flour
  • 1 cup cream
  • 1 cup lemonade
  • Pinch of salt

Extra flavour options

  • Apple spice - 1 cup grated apple, cinnamon, ginger, cloves (sprinkle of each).
  • Dates - 1 cup chopped dates - soak dates in boiling water for ten minutes, drain and cut.
  • Sultanas spice - 1 cup sultanas, cinnamon, mixed spice (sprinkle of each).

Method

  1. Preheat oven to 200 degrees and heat the baking tray.
  2. In a mixing bowl sift flour and salt. Make a well in the centre and add cream then lemonade. Add in one of the extra flavour options (optional).   
  3. Mix until just combined, do not over mix.  
  4. Put mixture onto floured board and roll or press to a 3cm thickness. Either cut into squares or use a round cutter.
  5. Place onto heated tray and bake for 12 minutes. Cool on a rack.
